If you’re looking for a quick and delicious no-bake summer treat, you’ve come to the right place. These s’mores Rice Krispie treats are super easy to make, are full of toasted marshmallow & brown butter flavor, are packed with chocolate and have a graham cracker crust. They’re small batch (of course), but super tall and can easily be doubled, tripled, or quadrupled as needed.

s’mores rice krispie:
- Unsalted butter: for browning to add more toasty flavor to the Rice Krispie treats. You can also use salted butter, just be sure to omit the extra salt from the recipe.
- Mini marshmallows: what binds the Rice Krispie cereal together – I’ve found that mini marshmallows melt the best so I highly recommend using them.
- Salt: just a pinch, for flavor.
- Vanilla: bean paste or extract, for flavor.
- Rice Krispie cereal: it wouldn’t be a Rice Krispie without it! (Although you can definitely use the off-brand version, no one will notice & I won’t tell if you don’t!)
- Chocolate baking bar: I used semi-sweet but milk chocolate would also be delicious here – you could also use hershey’s pieces in place of a baking bar to get a more authentic s’mores experience.
- Graham crackers: it wouldn’t be s’mores without them!

- Brown the butter, then add in the marshmallows, salt, and vanilla.
- Mix in the cereal, wait a few minutes, then mix in the chopped chocolate.


- Line the bottom of a pan with graham crackers.
- Add on the Rice Krispie mixture, top with marshmallows & extra chocolate, and allow the rice krispies to set.

Small Batch S’mores Rice Krispie Treats
Ingredients
- 2 sheets graham cracker
- 70 g unsalted butter (5 tbsp.)
- ⅛ tsp. salt
- 10 oz. mini marshmallows divided
- ½ tsp. vanilla
- 3 c. Rice Krispie cereal
- 65 g semi-sweet chocolate
Instructions
- Line an 8×4" loaf pan with parchment paper and line the bottom of the pan with graham crackers. Set aside.
- Pour 2 oz. of the mini marshmallows out on to a baking sheet. Use a kitchen torch to toast the marshmallows, or place them under the broiler until toasted. Set aside.
- Add the butter and salt to a large saucepan set over medium heat. Stir occasionally until the butter turns amber in color and develops little brown specks.
- Add in the remaining 8 oz. of mini marshmallows and stir constantly until the marshmallows melt and the mixture is completely smooth.
- Remove the mixture from the heat and mix in the vanilla, then mix in the Rice Krispie cereal.
- Allow the mixture to cool for 5 minutes. In the meantime, chop up your chocolate baking bar.
- Add the toasted marshmallows and chopped chocolate into the Rice Krispie mixture and do a couple of big folds to incorporate them into the mixture.
- Pour the mixture into your prepared loaf pan. Use a spoon or flat spatula to lightly spread the Rice Krispies into an even layer. (Do NOT pack the Rice Krispies down!)
- Press additional marshmallows and chocolate into the top of the Rice Krispies if desired and use a kitchen torch to toast the marshmallows.
- Cover the Rice Krispies and allow them to set at room temperature for at least 1 hour before slicing. Enjoy!
