Pistachio is a top-tier flavor and deserves more attention! I feel like a lot of pistachio flavored drinks, and even pistachio flavored ice creams have a very distinct almond extract flavor to them rather than real pistchio flavor (looking at you Starbucks!) For this pistachio latte, we’re going to steep pistachios directly into the heavy cream for the sauce, and add in some pistachio paste for even more delicious pistachio flavor. The sauce also has white chocolate which pairs super well with the pistachio.

For the white chocolate pistachio sauce:
Heavy whipping cream: the base of the sauce.
Pistachios: you’ll need some pistachios to steep in the heavy cream. You can use unsalted, salted, or roasted – the flavor profile of the sauce will just change depending on it!
White chocolate: I recommend using a white chocolate baking bar, but white chocolate chips will work as well. Higher-quality white chocolate will always taste better and be less waxy than lower-quality white chocolate chips.
For the white chocolate pistachio latte:
Pistachio paste: for some more pistachio flavor in the drink. It’s super delicious and almost has a nutella-y taste to it. Here is the pistachio paste I used, but you can leave it out if you’d like.
Espresso: here is the espresso I used.
Milk: use your favorite dairy or non-dairy milk alternative here. Pistachio milk would be great with this, for obvious reasons!

This recipe makes more white chocolate pistachio sauce than you’ll need for one latte. You can keep the extra sauce stored in an airtight container in the fridge for up to 1 week.
can I use instant espresso instead of brewed espresso?
Definitely! Simply combine 60mL of hot water with the amount of instant espresso needed as stated on the packaging.
why do you measure in grams?
My recipes are all written in grams because it is the most accurate way to bake. When you use a kitchen scale, you ensure that your baked goods turn out as close to the written recipe as possible. Plus, the cleanup is way easier when using a scale! I will provide standard cup measurements but please note that I have not tested the recipe using cup measurements and therefore can not guarantee your recipe will come out how mine did. Iced White Chocolate Pistachio Latte
Ingredients
White Chocolate Pistachio Sauce
- 150 g heavy whipping cream (⅔ c.)
- 40 g pistachios slightly crushed (⅓ c.)
- 113 g white chocolate (⅔ c.)
Iced White Chocolate Pistachio Latte
- 1 tbsp. pistachio paste
- 2 oz. freshly brewed espresso
- 6 oz. milk of choice
- 1-2 tbsp. white chocolate pistachio sauce
Instructions
White Chocolate Pistachio Sauce
- Place the white chocolate into a small mixing bowl and set it aside.
- Transfer the pistachios to a sealed plastic bag, and lightly crush them.
- Add the crushed pistachios and the heavy whipping cream into a small saucepan. Set themixture over medium heat, stirring occasionally until it reaches a simmer.
- Once the mixture is simmering, turn off the heat and let it sit for 10 minutes.
- Put the mixture back on medium heat and bring it to a simmer again.
- Once simmering, pour the cream through a fine-mesh sieve over the white chocolate.Whisk the cream and chocolate until the mixture is smooth.
Iced White Chocolate Pistachio Latte
- Line a cup with some pistachio paste, then fill it with ice.
- Drizzle 1 tbsp. of the white chocolate pistachio sauce into the cup, then pour in yourmilk of choice.
- Brew 2 shots espresso, then pour it over the milk.
- Stir, serve, and enjoy!
