Hello hello! I’m here with another delicious coffee for you – this french toast iced latte! It seriously tastes like french toast in coffee form. We’ll make a homemade syrup that’s super easy and consists of water, brown sugar, maple syrup, butter vanilla extract, and cinnamon – all the delicious flavors of french toast! ingredients and substituions
For the latte:
Espresso: I used and reccomend Papanicholas Cinnamon Hazelnut Espresso for a perfect compliment to the syrup. Of course you can use your favorite espresso here!
Milk: use your favorite dairy or non-dairy milk here! My current personal favorite is almond milk – but hazelnut milk would be a delicious compliment as well.
For the maple butter vanilla (french toast) syrup:
Light brown sugar: for sweetness and flavor.
Maple syrup: use pure maple syrup (with no corn syrup) here for the best maple flavor!
Water: the base of the syrup
Butter vanilla bakery emulsion: for flavor! Here is the one I use. You can also just substitute in vanilla to make it super easy – just note you obviously won’t have the butter-y flavor.
Ground cinnamon: for flavor! I love adding cinnamon to my french toast but if you’re not a fan you can omit this.
For the cold foam:
Milk: Whole milk, or any dairy milk will work the best here, or any barista blend non-dairy milk.
Heavy cream: essential for thickening up the cold foam.
Maple butter vanilla syrup: we’ll use some of the syrup that we made and froth it with the milk!

how to store the homemade french toast syrup
This recipe makes more syrup than you’ll need for one latte. You can keep the extra syrup stored in an airtight container in the fridge for up to 2 weeks. You can also scale down the recipe super easily if you just want to try it out before committing to a big batch.
can I turn this into a hot french toast latte?
Of course! Simply don’t add any ice to your cup, and warm your milk prior to mixing everything together. Please note that the cold foam will melt fast once it’s on the hot coffee.
can I use regular coffee?
Definitely! Espresso is essentially just super concentrated coffee, so please note that you’ll want to use a lot more coffee and a lot less milk – whichever your preferred ratio for that is!
why do you measure in grams?
My recipes are all written in grams because it is the most accurate way to bake. When you use a kitchen scale, you ensure that your baked goods turn out as close to the written recipe as possible. Plus, the cleanup is way easier when using a scale! I will provide standard cup measurements but please note that I have not tested the recipe using cup measurements and therefore can not guarantee your recipe will come out how mine did. French Toast Iced Latte
Ingredients
French Toast Syrup
- 225 g water (1 c.)
- 120 g pure maple syrup (¼ c. + 2 tbsp.)
- 100 g light brown sugar (½ c.)
- 2 tsp. butter vanilla bakery emulsion
- 1 tsp. ground cinnamon
French Toast Cold Foam
- 2 tbsp. whole milk
- 3 tbsp. heavy cream
- 1 tbsp. french toast syrup
French Toast Iced Latte
- 1-2 tbsp. french toast syrup
- 6 oz. milk of choice
- 2 oz. espresso
Instructions
French Toast Syrup
- To a small saucepan, add the water, maple syrup, brown sugar, butter vanilla bakery emulsion, and ground cinnamon. Set the mixture over medium heat, stirring ocasionally.
- Let the syrup come to a simmer, then remove it from the heat and transfer it to a container to cool.
French Toast Cold Foam
- Once you're ready to make your drink, add the milk, heavy cream, and 1 tbsp. of the french toast syrup to a medium sized cup or container. Froth or shake the mixture until it's thick and foamy.
French Toast Iced Latte
- Fill a medium sized cup with ice. Pour 1-2 tbsp. of the french toast syrup over the ice, depending on how sweet you'd like the drink to be.
- Pour the milk over the ice.
- Brew 2 shots of espresso, then add them into the drink.
- Top with the french toast cold foam and a dusting of cinnamon. Serve and enjoy!
