Mixing the cold foam into the banana bread cold brew.

I’m back with another fruity coffee drink, this time with bananas! We’re taking all the delicious flavors of banana bread and wrapping them up into one delicious cold brew. First we’ll start off with a simple syrup made with brown sugar, cinnamon, butter & vanilla extract, water, and your nut of choice (I chose walnuts!) Then we’ll mix that into some cold brew along with a cold foam that’s made with banana milk & heavy cream!

ingredients for a banana bread cold brew:

  • Water: the base of the syrup.
  • Light brown sugar: for sweetness & flavor – and it’s also part of the base to a simple syrup. I highly recommend brown sugar here for the best flavor.
  • Ground cinnamon: for flavor! If you’re not a cinnamon fan you can easily leave this out.
  • Butter extract: for the delicious buttery flavor of banana bread of course. You can use this butter extract here or you can use this butter vanilla emulsion in place of the butter & vanilla.
  • Vanilla extract: for some more flavor.
  • Chopped walnuts: to infuse into the syrup. You can use hazelnuts, pistachios, pecans – whichever nut you typically add into your own banana bread here as well, or you can leave it out all together if needed.

  • Heavy whipping cream: needed to thicken up the cold foam – it’s essentially whipped cream! I haven’t tried it with cold foam, but silk makes a great dairy free heavy whipping cream that’s worked perfectly for me for making regular whipped cream.
  • Banana milk: okay I know this might sound a little strange – but it exists! You’ll only need a small amount in here so you can certainly replace this with regular milk if you don’t feel like buying a whole thing of banana milk – but it really does add in that banana flavor to compliment the banana bread syrup.
  • Banana bread syrup: we’ll use some banana bread syrup for more flavor in the cold foam.
  • Cold brew: the base of your coffee of course! Here is the coffee I used to make my cold brew.

Add ice into the cup.
Pouring cold foam on to the coffee.
Then top it with your banana bread cold foam.

Ingredients 

Cold Brew

Banana Bread Syrup

  • 200 mL water (7 oz.)
  • 200 g light brown sugar (1 c.)
  • 1 tsp. ground cinnamon
  • 1 tsp. butter extract
  • 1 tsp. vanilla extract
  • 60 g chopped walnuts (½ c.)

Banana Bread Cold Foam

  • 3 tbsp. heavy whipping cream
  • 1 tbsp. banana milk
  • 1 tbsp. banana bread syrup

Instructions 

Cold Brew

  • Add the coffee grounds and water to a french press. Stir the mixture well, then place the lid on top of the french press and let the coffee steep in the fridge overnight.
  • Once the coffee has steeped overnight, slowly push down on the french press to separate out the coffee grounds.

Banana Bread Syrup

  • To a small saucepan, add in the water, brown sugar, cinnamon, butter extract, vanilla extract, and chopped walnuts.
  • Set the mixture over medium heat, stirring occasionally until the mixture comes to a simmer. Let the syrup simmer for 5 minutes, then remove it from the heat.
  • Let the syrup sit for an additional 10 minutes to allow the flavors to infuse together.
  • Place a fine mesh sieve over a bowl or container, and pour the syrup through it to remove all the walnuts.

Banana Bread Cold Foam

  • Once you're ready to make your drink, add the heavy cream, banana milk, and 1 tbsp. of the banana bread syrup to a small cup or container. Froth or shake the mixture until it's thick and foamy.

Banana Bread Cold Brew

  • Pour 1 tbsp. of banana bread syrup into a cup, then top it with 8 oz. of cold brew.
  • Add in some ice, then top the drink with the banana bread cold foam. Serve and enjoy!

Notes

The syrup makes enough for 8 drinks. You can keep the syrup stored in an airtight container in the fridge for up to 2 weeks. The cold brew makes enough for 4 drinks – it’s best to consume it at least within 4 days of making it.
If you like a sweeter, more creamy drink, add in 1-2 tbsp. of banana milk or creamer to the cold brew before topping it with the cold foam.
