ingredients for a gingerbread white mocha:

gingerbread white chocolate sauce:
  • Heavy whipping cream: the base of the sauce.
  • White chocolate: I recommend a high quality white chocolate baking bar for the best flavor. In a pinch, white chocolate chips will work as well.
  • Molasses: for some of that classic gingerbread flavor! Make sure you are using unsulphured molasses. In a pinch, you can substitute in dark brown sugar – just note that it will taste a little less molasses-y.
  • Ground cinnamon, ginger, and nutmeg: for flavor. Feel free to use a pre-made gingerbread spice blend, or a blend of your favorite gingerbread spices.

  • White chocolate mocha coffee: I used Papanicholas White Chocolate Mocha Coffee. You can use any white chocolate coffee, a neutral tasting strong coffee, or any coffee flavor you think will pair well with the gingerbread and white chocolate!
  • Gingerbread white chocolate sauce: we’ll use some of the homemade white chocolate sauce in here!
  • Milk: use your favorite dairy or non-dairy milk here.
whipped cream:
  • Heavy whipping cream: the base of the whipped cream.
  • Gingerbread white chocolate sauce: we’ll use some of the homemade white chocolate sauce in here!
  • Salt: a pinch of salt helps bring out even more flavor in the sauce and whipped cream.

Here are the steps to make a delicious homemade white chocolate mocha. The full recipe with instructions can be found at the end of this blog post.

Whip up the whipped cream.
Pouring gingerbread white chocolate sauce into the cup.
Pour some of the gingerbread white chocolate sauce into a coffee cup.
Pouring coffee into the cup.
Add in your strongly, freshly brewed coffee.
Pouring milk into the cup.
Pour frothed milk over the coffee.
Topping the drink with whipped cream.
Then top with the whipped cream & enjoy.

how do I store the gingerbread white chocolate sauce?

The sauce makes a larger batch than you’ll need for one coffee (but hey – I won’t judge!) Because of the addition of heavy cream, the sauce does need to be stored in an airtight container in the fridge where it will keep well for 1 week.

can I double this recipe?

Of course! You can double this recipe, triple it, or even quadruple it as needed! This is truly so easy to throw together and is so delicious. If you’re trying to make a large batch of the cold foam, it would probably be easiest to use a hand mixer to “froth” it.

Ingredients 

Gingerbread White Chocolate Sauce

  • 150 g heavy whipping cream (⅔ c.)
  • 1 tbsp. molasses
  • ¾ tsp. ground cinnamon
  • ½ tsp. ground ginger
  • ¼ tsp. ground nutmeg
  • 113 g white chocolate chopped (⅔ c.)

Gingerbread Whipped Cream

  • 55 g heavy whipping cream (¼ c.)
  • 1 tbsp. gingerbread white chocolate sauce
  • tsp. salt

Instructions 

Gingerbread White Chocolate Sauce

  • Chop up the white chocolate and place it into a small mixing bowl.
  • Add the heavy cream, molasses, cinnamon, ginger and nutmeg to a small saucepan. Set the mixture over medium heat, stirring occasionally until it comes to a simmer.
  • Pour the hot cream over the white chocolate, then whisk the mixture together until it's smooth.
  • Start brewing a strong batch of coffee.* In the meantime, start on the whipped cream.

Gingerbread Whipped Cream

  • Add the heavy cream, 1 tbsp. of the gingerbread white chocolate sauce, and salt to a medium sized mixing bowl. Use a hand mixer to beat the whipped cream until it reaches soft peaks.

Gingerbread White Chocolate Mocha

  • Add 2 tbsp. of the gingerbread white chocolate sauce to a coffee cup.
  • Pour the coffee over the sauce, stirring to combine.
  • Froth the milk until it's hot and foamy, then pour it over the coffee.
  • Top the coffee with the whipped cream and a dusting of cinnamon and enjoy! Store extra gingerbread white chocolate sauce in the fridge.

Notes

*For a stronger coffee taste you can use espresso. You’ll want to use 2-3 shots of espresso and more milk to taste.
The sauce makes enough for ~6 drinks. Store extra gingerbread white chocolate sauce in the fridge in an airtight container for up to 1 week.
