Hello hello! Today I’m here with a super easy and super delicious croissant recipe. I know most of us are probably burnt out from all of the holiday baking, but I’m sure we all want a sweet treat — which is exactly why I developed these. These are my earl grey chocolate almond croissants and they’ve got a little bit of everything in them. They start out with a store-bought croissant, then they’re brushed with an earl grey infused simple syrup for flavor and moisture, filled with an earl grey almond frangipane that’s nutty with a hint of black tea & bergamot, and they’re also filled with chopped chocolate. They’re the perfect “lazy” croissant recipe and they’re super delish, so let’s get into it! ☺︎

- You don’t need to make your own croissants. Respect to everyone who has mastered the art of making croissants, and takes the time to make them – but these would not be easy if we were making our own croissants. Simply buy some pre-made croissants from the grocery store and you’re well on your way to making these!
- They have a very generous amount of filling. These are jam-packed with frangipane, chocolate, and flavor.

Weigh your ingredients:
My recipes are all written in grams because it is the most accurate way to bake. When you use a kitchen scale, you ensure that your baked goods turn out as close to the written recipe as possible. Plus, the cleanup is way easier when using a scale! I will provide standard cup measurements but please note that I have not tested the recipe using cup measurements and therefore can not guarantee your recipe will come out how mine did. Here is my favorite kitchen scale.
Mix the dough carefully:
When adding in the flour, only fold the mixture just until no flour streaks remain. Over mixing the dough leads to more gluten formation, which can make the cookies thicker and more tough in texture.
A note on oven temperature:
Ovens vary and fluctuate in temperature and might not always actually be at the temperature they claim to be at. If you love to bake like I do, I highly recommend getting an oven thermometer. They are super helpful for letting you know when your oven might be lying to you! I use this one.

- Store-bought croissants: no need to make your own (but massive props if you do!), just buy some big croissants from the bakery section at the grocery store. You could also buy the mini croissants to yield 8 mini earl grey croissants.
Earl grey simple syrup:
- Granulated sugar & water: the base of any good simple syrup.
- Earl grey tea: for flavor, use your favorite earl grey tea here or omit it if you want some plain delish chocolate almond croissants.
Earl grey almond Frangipane:
- Unsalted butter: for texture and flavor. You can also use salted butter here, just be sure to omit the extra salt that gets added.
- Granulated sugar: for sweetening the frangipane.
- Egg: helps to bind the frangipane mixture together.
- Almond extract: for flavor.
- Almond flour: the base of the frangipane.
- All-purpose flour: we’ll use all purpose flour to thicken up the frangipane so that it doesn’t spread too much while baking.
- Salt: balances and brings out the flavor and sweetness of the filling.
- Earl grey tea: for flavor, use your favorite earl grey tea here or omit it if you want some plain delish chocolate almond croissants.
- Sliced almonds: for sprinkling on top of the croissants.
- Semi-sweet chocolate: for flavor, I recommend using a chocolate baking bar over chocolate chips so you’ll get nice pools of melted chocolate in the croissants and on top of them.

- Make the earl grey simple syrup.
- Mix the wet ingredients for the frangipane together.


- Mix in the dry ingredients.
- Brush the croissants with the simple syrup, fill them with frangipane and chocolate, then bake and enjoy!

can I double this recipe?
Definitely – just please be sure to use grams for the best results. You could also use mini croissants to make 8 small ones instead of 4 large ones.
can I make these ahead of time?
Frangipane: You can make the frangipane the night before baking these off and keep it stored in the fridge until you’re ready to use it, just be sure to leave it out at room temperature for ~30 minutes before assembling the croissants so that you can pipe it / spread it easily.
Earl grey simple syrup: You can make the simple syrup the night before baking these as well, just keep it stored in an airtight container in the fridge.
How to store croissants
Store these croissants in an airtight container at room temperature. They will taste the best while they are still warm out of the oven, but will keep for a day or two.

Earl Grey Chocolate Almond Croissants
Ingredients
- 4 large croissants*
Simple Syrup
- 1 sachet earl grey tea
- 35 g granulated sugar (3 tbsp.)
- 35 g water (3 tbsp.)
Earl Grey Almond Frangipane
- 56 g unsalted butter room temperature (¼ c.)
- 75 g granulated sugar (¼ c. + 2 tbsp.)
- 1 egg room temperature
- ½ tsp. almond extract
- 120 g almond flour (1 c.)
- 22 g all-purpose flour (3 tbsp.)
- ⅛ tsp. salt
- 1 sachet earl grey tea
- 28 g sliced almonds
- 85 g semi-sweet chocolate baking bar (preffered) or chips (1/3 c.)
Instructions
- Preheat the oven to 375°F/ 190°C. Line a baking sheet with parchment paper.
Simple Syrup
- Heat up the water to a boil in a kettle or in the microwave.
- Add the sugar to a small heat-safe cup or bowl. Pour the water over the sugar and mix well until the sugar dissolves.
- Add the tea sachet to the mixture and let it steep while you make the frangipane.
Earl Grey Almond Frangipane
- With a hand mixer or by hand, beat together the butter and sugar until it's light and fluffy.
- Beat in the egg and almond extract until well combined.
- Add the almond flour, flour, and salt into the frangipane. Open and empty an earl grey tea sachet into the mixture as well and mix until well combined.
Assembly
- Slice open each croissant lengthwise, leaving it slightly attached at the end.
- Use a pastry brush to brush the inside of the croisisants with the earl grey simple syrup.
- Transfer the frangipane to a piping bag fitted with a large round tip (for easy distribution, optional). Pipe a generous amount of frangipane on to one side of each croissant. Be sure to reserve a small amount of frangipane for the top of each croissant.
- Chop up the chocolate into chunks and evenly distribute it on top of the frangipane, reserving a small amount for the topping.
- Fold the top half back on top of the croissants, then pipe a squiggly line of frangipane on top of each croissant. Pressed the sliced almonds onto the frangipane, then press the remaining chocolate chunks on top as well.
- Bake the croissants for 10-15 minutes or until the frangipane starts to turn golden brown.
- Serve and enjoy!
