Lemon Cherry Mascarpone Loaf

Moist and fluffy lemon loaf cake swirled with cherry mascarpone.

Ingredients 

Cherry Mascarpone

  • 140 g mascarpone room temperature (½ c. + 2 tbsp.)
  • 80 g cherry preserves (¼ c.)

Lemon Loaf Cake

  • 200 g granulated sugar (1 c.)
  • 90 g unsalted butter room temperature (¼ c. + 2 tbsp.)
  • 50 g vegetable oil (¼ c.)
  • zest of two lemons
  • 2 eggs room temperature
  • 30 g lemon juice (2 tbsp.)
  • 140 g sour cream room temperature (½ c. + 2 tbsp.)
  • 210 g all purpose flour (1 ¾ c.)
  • 2 tsp. baking powder
  • ½ tsp. salt

Lemon Icing

  • 180 g powdered sugar (1 ½ c.)
  • 30 g lemon juice (2 tbsp.)

Instructions 

  • Preheat the oven to 350°F / 175°C. Butter and line an 8x4" loaf pan with parchment paper.

Cherry Mascarpone

  • In a small bowl, mix together the mascarpone and cherry preserves. Set aside.

Lemon Loaf Cake

  • In a medium sized mixing bowl with a stand mixer or hand mixer, beat together the sugar, butter, vegetable oil, and lemon zest on medium speed for 5 minutes.
  • Add in the eggs, lemon juice, and sour cream. Beat the mixture together for 1 minute.
  • Add in the flour, baking powder, and salt. Use a rubber spatula to fold the mixture together just until no flour streaks remain.
  • Place ~⅓ of the lemon loaf batter into the bottom of the loaf pan. Top with ~½ of the mascarpone mixture, smoothing it out on top to the best of your ability (it does not have to be perfect!) Top with another ~⅓ of the lemon loaf batter, followed by the rest of the cherry mascarpone. Finish off with the remaining lemon loaf batter.
  • Bake for 50-60 minutes, until a toothpick inserted in the center of the cake comes out clean.
  • Let the cake cool in the loaf pan until the pan is cool enough to touch. Then, turn out the lemon loaf and let it finish cooling on a wire rack

Lemon Icing

  • In a small bowl, whisk together the powdered sugar and lemon juice. If you want a thinner glaze, add more lemon juice.
  • Once the lemon loaf has completely cooled to room temperature, evenly spread the icing over it. Top with additional cherries if desired, serve, and enjoy!
